Tonkotsu began in 2011 as a pop-up restaurant when Ken and Emma couldn't find the perfect Ramen in London. Due to high demand, the first restaurant opened in Soho in 2012, and now there are 16 locations. The popular chilli sauce that came with every dish led to the creation of Tonkotsu chilli oils, which won a 3-star Great Taste Award and rave reviews. According to food critic Jay Rayner Food Critic "...a beautifully complex oil with an intense umami hit. The heat is really well judged, allowing the other flavours to shine through.
